¨Healthy Slutty Brownies¨

Since all my friends know that when they invite me to their house i will bring something healthy, this past 4th of July i chose to bring dessert to pair up with their amazing dishes.

I love to follow healthy and not-so-healthy Instagram accounts and when i find a recipe that i like i recreate it with a healthy twist.

I found this epic recipe and turned it into a guilt-free treat which turned out to be the favorite at the party!

 

They are decadent. One small bite will be enough to satisfy any sweet tooth but why stop there?

INGREDIENTS:

For the Brownie layer:

  • 1/2 cup extra virgin coconut oil
  • 1 cup coconut sugar
  • 3/4 cup cocoa powder
  • 1/2 tsp sea salt
  • 2 tsp organic vanilla extract
  • 2 large eggs
  • 1/2 cup almond flour
  •  
  • 1 package Glutino, Gluten Free Cookies, Chocolate Vanilla Creme (healthy version of the original Oreos)

FOR THE CHOCOLATE CHIP COOKIE MIX:

  • 1/2 cup EXTRA VIRGIN coconut oil 
  • 3/4 cup coconut sugar
  • 1 egg
  • 1 1/4 tsp organic vanilla extract
  • 1 1/4 cups almond flour
  • 1/2 tsp sea salt
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1 cup dark 70% chocolate chips

INSTRUCTIONS

For the Brownie layer:

  1. In a medium sauce pan, melt the coconut oil over medium high heat. Add the sugar and cocoa powder once the oil is melted. Whisk to combine and remove from heat. Add the salt, vanilla and eggs and continuously whisk until the eggs are combined. Add the almond flour and continue to mix. Set batter aside.

For the chocolate chip cookie mix:

  1. Cream together the coconut oil and sugar in a mixer. Add the eggs and vanilla, making sure to scrape down the sides of the mixing bowl. Add the almond flour, salt, baking soda and baking powder and mix on low until everything is incorporated. Fold in the chocolate chips. Set dough aside.
  2. Pre-heat the oven to 350 degrees F.
  3. Line the bottom of a 9x9 baking pan with tin foil and then spray the tin foil with a layer of baking spray.
  4. Layer the cookie dough on the bottom of a 9x9 baking pan, pressing down to form the bottom of the slutty brownies.
  5. Layer as many cookies that will fit on top of the cookie dough. No need to overlap. One single layer will do.
  6. Pour the brownie batter on top of the cookie layer and make sure it's evenly layers on top.
  7. Bake for 30-35 minutes. Test with a knife to see if the center is done. If the knife comes out clean, let the brownies rest for at least 2 hours before serving. If the knife comes out with batter still on it, allow the brownies to bake about 5 minutes more. Slice and serve.
