Although I love dairy, I no longer eat it - my body just does not process it well.
Therefore, I'm always looking for options to replace milk for my smoothies, baking recipes and even just as pairing for my favorite matcha gluten-free cookies.
And this week I discovered a new favorite addition to my fridge staples - Elmhurst Milk! - a delicious walnut milk. I first heard about this product while riding a Freebee - the electric cars that provide free on-demand transportation around Miami - I use them a lot to get around in Brickell. Well, they were giving samples away and I was immediately hooked.
I promise they're not paying me to say this stuff. I just loooooove it, love it, love it.
It's delicious alone or as an ingrediente to create my recipes (stay tuned for those). It's such a treat - you can really taste the cashews but it also takes so much like milk. It's refreshing and a little addicting, kind of reminds me of the way I enjoy the last sip of milk in a bowl after you eat cereal - divine!
The cool part about it is that Elmhurst used to produce traditional milk and they changed their business to only produce plant-based milk.
The company has been around since the 1920s and started with a small herd of cattle. Now, they said goodbye to the pretty cows and have:
- Milked Almonds
- Milked Cashews (my fave!)
- Milked Walnuts
- Milked Hazelnuts
You can find the product in Publix or buy on their website.
