For all those who love satisfying your sweet cravings without guilt, here's my easy, gluten-free and dairy-free Matcha Pound-cake
Matcha is well known for its high antioxidant content and for being a powerful metabolism booster. It can be a great substitute for coffee gives you awesome energy throughout the day. That's why I love to cook with Matcha as much as I can! From savory to sweet, to hot or cold, baked or raw, it is definitely one of my favorite ingredients.
I highly recommend using Ceremonial Matcha powder.
My absolute favorite brand, which I splurge on from time to time, is The Republic Of Tea and you can easily order it online.
1 cup cashew vanilla milk
4 tsp. Matcha green tea powder
2 cups almond flour
1/2 cup coconut oil
1 1/2 coconut sugar
2 tsp. baking powder
2 tsp. vanilla extract
Preheat the oven to 325F degrees; spray a loaf pan with coconut oil and reserve.
Beat the eggs, vanilla extract and milk together. Once well mixed, add the rest of the other ingredients.
Pour batter into pan and bake for 45-50 min or until golden brown on the outside and a toothpick comes out clean.
Cool at the countertop for at least 1 hour before serving.
Enjoy with berries and tea on the side :)!
