Shrimp & Quinoa Ceviche

Nothing better for the summer days than this fresh and crunchy ceviche. Be sure to enjoy it with black bean chips and save some for tomorrow´s lunch!

6 servings 

•2 lb Fresh Shrimp
1 Cup cooked quinoa
•1/2 cup olive oil  
•1 cup Yuzu extract
•1/2 red onion
•1/2 cup copped cilantro  
•2 serrano chiles
•2 Avocadoes, cubed
•Salt and pepper to taste 

Prep:

-Cook quinoa as directed, once ready chill and reserve.

-Mix all vegetables, with yuzu and olive oil. add salt an pepper and finally the shrimp.

-Once mixed add the quinoa and reserve at the fridge at least 1 hour before serving.
