Acai Bowl

Before researching and becoming obsessed with healthy ingredients, i thought ¨superfoods¨ were found at all the green salads, no fats, zero flavor and lots of crunch... and i always thought, ok, they must be loaded with all the vitamins we need but i am not a lettuce lover, honestly...  so probably these are not for me! But wait, This is what happened when i researched, i discovered that this word defines a food (such as salmon, broccoli, or blueberries) that is rich in compounds (such as antioxidants, fiber, or fatty acids) considered beneficial to a person's health, and also help increase energy and vitality, regulate cholesterol and blood pressure and may help to prevent or fight cancer and other diseases...

Just in time for this new obsession all my healthy and fit friends were talking about the acclaimed ¨Açai Bowl¨, and again, this super-ingredient had sooo much to offer (Because it is rich in polyphenols and other antioxidants, it's been hailed by some as a superfood or miracle berry) that i had to get one ASAP!!! 

I loved it... for breakfast, lunch, cheat meal and even as a refreshing snack to join simona & me for a beach day, so i created this home-made, easy to prepare and storage-able friendly recipe:

Ingredients:  

  • 4 tbsp. Powder Açai (this is better that the pureéd because it has no added sugar) 
  • 2 cups cashew milk (vanilla)
  • 1 banana
  • The juice of 1 lemon
  • 1 tbsp. coconut nectar
  • 1 cup  frozen strawberries

For the Topping:

  • 2 tsp. shredded coconut 
  • 2 tsp.  unsalted cashews 
  • 10 berries
  • 5 raspberries 
  • 2 tsp. almond granola 
  • 1 tsp. raw honey 
  • 1 tsp. chia 
  • 1 tsp. hemp seeds 
  • 1 tsp. bee pollen 

 

Directions:

  1. Blend ingredients until light pureé.
  2. Store in the freezer for 1 hour.
  3. Just before serving ( ice cream consistency) top with the mentioned ingredients.
  4. Enjoy!
