October is here and so are the pumpkins!
I´m so happy to be using this, since it´s one of my favorite ingredients.
Organic, canned or fresh you can always bake delicious treats for you and your family, but today i share with you my new favorite addiction. Raw, Gluten, dairy and guilt free to indulge all your sweet cravings no matter what time of the day is it.
One important thing is that you don´t need to turn on the oven, isn´t it amazing?
FOR THE CRUST
-5 seeded medjool dates
2 tsp coconut oil
1/2 cup shredded coconut
2 tsp organic vanilla extract
1 tsp sea salt
1 tsp chia seeds
1 tsp hemp seeds
FOR THE FILLING:
-1 cup boiled mashed pumpkin
-1/2 cup cashew milk
-2 seeded medjool dates
-2 gr (1 single pack) flavorless grenetin
-4 tsp pumpkin spice mix (cinnamon,
Using a food processor or a Nutri bullet, chop all the crust ingredients until a soft paste forms.
-Cover a cristal Payrex with the mix and press firmly, Reserve at the fridge.
-Hidrate the grenetin for 1 minute wit 1/4 cup water. after the minute goes by, mocrowave for 15 seconds at the microwave.
-Blend together the pumpkin pureé, milk, dates and grenetin.
-Pour into the crusted payrex. Fridge for at leasr 1 hour before serving. Top with chopped cashews and enjoy!
