A fresh and healthy twist on guacamole, kaleamole adds a healthy protein dose of kale into the mix!

Say hello to your new favorite snack, Kaleamole!

Guacamole is a no-brainer option when it comes to healthy, delicious snacking--as long as you pair eating it with carrots or veggies instead of chips.

This recipe for a 10-minute Kaleamole (guacamole + kale) adds healthy kale into the mix.

If you want, top with pomegranate and enjoy with cassava bread as well as your favorite veggies.

 

Ingredients

  • 8 AVOCADOS LARGE, RIPE
  • 6 KALE LEAVES
  • 1/2 WHITE ONIONCHOPPED
  • 1 SERRANO CHILE SEEDED AND DEVEINED
  • 3/4 CUP LEMON JUICE
  • 1/2 CUP EXTRA-VIRGIN OLIVE OIL
  • SALT TO TASTE
  • PEPPER TO TASTE
  • 1 CUP ALMONDS SLICED
  • 1 CUP POMEGRANATE

Directions

  1. Clean the avocados, take the heart and skin off and toss into a bowl.
  2. Mix in the finely chopped kale, onion and chile. Mix well with 2 forks until the avocado is completely mixed in.
  3. Toss the lemon, oil, salt and pepper. Mix and serve.
  4. Top with sliced almond and pomegranate for more freshness.
  5. Enjoy!
